This recipe is a delicious way to sneak lots of vegetables into one big pot. In addition to a few strips of bacon (which just makes everything better, right?) this soup is chock full of veggies, beans, a hint of spice and tons of flavor! I have seen quicker versions of black beans soup that call for canned beans and ham, but I find that those ingredients can impart quite a bit of sodium. By soaking dried beans, using low sodium chicken stock, and seasoning your soup at the very end, you can control the salt content based on your own taste.
